Festive Gingerbread Cupcakes

Hello everyone, and welcome back to our blog. How are you today? I hope you're having a good day! As it's the run up to Christmas we are doing a little 5 day blogmas from today until Christmas Day! So, our first blogmass blog post this year had to be our festive baking post. We did one of these last year making Gingerbread men, they were so good. So this year we thought we would try and top that and make gingerbread cupcakes! They turned out good although we did have a couple of mini disasters! So without further ado let's get on with the recipe!

This recipe makes 12 cupcakes.

Ingredients:
75g unsalted butter
100g caster sugar
125ml black treacle
1 large egg
1 large egg yolk
175g plain flower
1tbsp cocoa powder
1 1/4tsp ground ginger
1tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp ground nutmeg
1/4 tsp salt
1 tsp baking soda
125ml cup of hot milk
You will also need cupcake cases
For the buttercream:
240g softened butter
400g sifted icing sugar
2 tsp vanilla extract
4 tbsp milk

Step 1: Preheat your oven to 175 degrees C/Gas mark 4. Put your chosen cupcake cases into your tray ready for when the cake mix is made.

Step 2: In a large bowl, mix together the butter and sugar until creamed.
Step 3: Once the butter and sugar are creamed together, add the treacle and the egg and egg yolk, and mix together.
Step 4: In a different large bowl, sift the flour, cocoa powder, ginger, cinnamon, allspice, nutmeg and salt.
Step 5: Heat the milk carefully making sure that it doesn't boil. When the milk is heated add the baking soda and let it dissolve in the milk.
Step 6: Add the flour mixture into the bowl with the butter and sugar mixture and mix them together.
Step 7: Stir in the hot milk mixture into the other mixture and keep mixing, until all together.

Step 8: Spoon the mixture evenly into the cupcake cases in the tray. Bake the cupcakes for 15-20 minutes or until they are slightly springy to touch.
Step 9: After the cakes are cooked and are ready to come out of the oven, put them on a wire rack and leave them to cool.

As the cupcakes are cooling you can start to make the buttercream icing.

Step 1: Cream the butter in a large bowl until it is smooth then gradually add the icing sugar in with the butter, keep whisking until it is light and fluffy.
Step 2: Add the vanilla and milk and keep mixing until it is completely combined.

Step 3: Once the cupcakes are fully cooled, you can start to put the icing on them. We originally tried to use a piping bag to put the icing on, however, we picked a nozzle that was too small so the icing didn't come out right, so we just used a knife to spread the icing around the cakes.
Step 4: Add decorations of your choice. We added gingerbread men sprinkles as we thought they looked super cute and thought they went well with whole gingerbread theme!
After you've finished decorating them, you can enjoy eating them! We loved these cupcakes, as we love gingerbread men. These cupcakes were lovely, they tasted like Christmas, it made us feel even more festive, if that's possible!
