Terry's Chocolate Orange Cookies

Hello everybody, welcome back to our blog! How are you all today? Today's blog post is by Lydia, and as you can tell by the title it's a baking blog post! It's getting closer and closer to Christmas, and as it's near that time of the year, we have a festive recipe blog post for you here. Both Jade and I love a chocolate orange, we always have them around this time of year. Especially when we get them as gifts at Christmas. I love watching a Christmas film and sharing a chocolate orange with my family of an evening in the countdown to Christmas. So, we made some chocolate orange cookies, and here's how we made them!

Ingredients;
  1. 110g Unsalted Butter, softened,
  2. 200g Light Brown Sugar,
  3. 1 Large Free-range Egg,
  4. 1 Teaspoon Vanilla Extract,
  5. 165g Plain Flour,
  6. Pinch of Salt,
  7. 1/2 Teaspoon Baking Powder,
  8. 1/2 Teaspoon Bicarbonate of Soda,
  9. 30g Cocoa Powder,
  10. Terry's Chocolate Orange .
Method;
  1. Preheat oven to 190°C (Gas Mark 5). Line two large baking trays with Parchment paper.
  2. Cream the butter, sugar and vanilla together until light and fluffy. Add the egg and beat until incorporated,
  3. Add the flour, pinch of salt, baking powder, bicarbonate of soda and cocoa powder, mix until a dough comes together.
  4. Divide the mixture into balls. Spread out evenly on the baking trays.
  5. Put a segment of the chocolate orange on each ball of dough.
  6. Bake in the preheated oven for 10-12 minutes, until spread out and crackling on top. 
  7. Once cooked, allow the cookies to cool on the trays for 5 minutes - in this time the cookies will harden a bit to make them easier to move. Finish cooling on a wire rack.
  8. Once cooled, enjoy the delicious cookies.

If you don't like chocolate oranges then you can use the same recipe but change the chocolate orange to a chocolate of your choice. These cookies were delicious! We also made different cookies using the same recipe just had the small pieces of terry's chocolate orange mixed into the mixture. They were both just as nice. Chocolate S'mores Cookies

Hello everyone and welcome back. Today's blog post is by me, Lydia. In this blog post, I will be giving you the perfect recipe to make delicious chocolate s'mores cookies. At one of our sleepovers we decided we wanted to do some baking, so we looked up an easy cookie recipe and then we thought that we would add a little bit of a twist by putting Nutella and marshmallows in the middle. 
Ingredients:
200g butter
300g caster sugar
275g self-raising flour
75g cocoa powder
1 large egg
Nutella (Chocolate spread)
Marshmallows

How to make them:

Step 1: Put you oven on at 200 degrees Celsius, and put greaseproof paper on a baking tray ready for when the cookies are done.
Step 2: Mix together the butter and sugar, we used an electric hand mixer but it would work just by hand. You want to whisk it until the butter turns into a pale colour.
Step 3: Once the butter and sugar are creamed together then add the egg. Crack the egg into a separate bowl to start with to make sure that it is a good egg, and then put it in with the mixture and mix together.
Step 4: When the egg has been mixed in then you can add the dry ingredients, the self-raising flour, and cocoa powder. Once they have been mixed you can start to make them into the cookie shape.
Step 5: To make the cookies we got a bit of cookie dough rolled it into a ball and then flattened them out.
Step 6: Then after the base has been flattened out you get a teaspoon full of the Nutella and put it in the middle of the base of the cookie and make sure it is spread equally. After that add the marshmallows, when we made them we put four little ones on the Nutella.

Step 7: As you will want the cookies to be soft and gooey inside you then have to put a top on them, to do this you just have to make a top the same way you made the base and put them on top of the marshmallows.

Step 8: Put them in the oven, let them cook for 11 minutes so they are still soft and gooey. They will look uncooked but trust me they are. 

After the cookies have been cooking in the oven for 11 minutes take them out and let them cool down first before you try them. They should have small cracks in where the tops were cooking, and when you open them they should be all gooey inside.
